Easy & Delicious Burrito Bowl Recipe!

Looking for something quick and easy for dinner, but also delicious? Try making your own burrito bowl! I love this recipe because it has so much flexibility to your taste, and it can be completely vegetarian or you can add your own grass fed beef or organic chicken. Options are endless! I like to keep it vegetarian for a meatless Monday meal with a side of cucumber salad. I hope you enjoy.
1⁄3 cup of brown rice, cooked
Pico De Gallo Salsa (as much as you want!) or buy fresh salsa at remark or the market.
1 cup of lettuce
1⁄2 cup of black beans (if using canned, drain & rinse)
1⁄3 cup of avocado or guac
1/2 cup refried beans (optional)
2 green onion
Salt & pepper
Lime
Cilantro for garnish
Cook brown rice ahead of time according to package instructions. Heat up the black beans and rice in a skillet, adding salt & pepper to taste.
Add rice and beans to a bowl, then add lettuce, fresh salsa, green onion and avocado. Squeeze lime on top and garnish with cilantro! This takes your meal up a notch! YUM!
*To make your own Pico De Gallo: chop up 1 large tomato, 1 small white onion (or red if you prefer), add the juice of 1 lime, add some cilantro, then salt & pepper to taste!
